Granola

This is the granola we serve at our shop, and it is very much celebrated by our customers. We are providing the basic recipe but you can play around, adding for instance more seeds or dry fruits like peaches, mangoes and pineapple. It is truly delicious, low in sugars and pairs perfectly with our greek yogurt, although we have seen it going on smoothie bowls, fruit plates and (yikes) toast.

Ingredients
  • 2 cups old fashioned oats
  • 1 cup almonds (we use local "beach" almonds
  • 1 cup mixed nuts and seeds (sunflower, flax, sesame, quinoa, etc)
  • 2 tbsp flax or oat meal
  • ¼ cup campeche honey
  • 3 tbsp EV olive oil
  • 1 pinch of salt
  • 1 cup raisins
  • ¼ cup grated fresh coconut (replace for dry coconut flakes if not available)
  • 1 pinch cinnamon
Instructions
  1. Turn oven to 350°F (180°C). Line your baking tray with foil.

  2. Mix all the dry ingredients, including the grated coconut. Then add a dash of salt, cinnamon and any other spices you like.

  3. In a separate container, mix the campeche honey with the olive oil until it emulsifies.

  4. Add this mix to the dry ingredients and stir until well incorporated.

  5. Spread evenly on the baking tray and put in the oven for approx. 15 minutes, then stir.

  6. Usually, we know it's ready when bees start showing up in the kitchen. If you live where there are no bees (consider moving), you'll need to keep an eye until the granola is evenly golden.

  7. Remove from oven and allow to cool down for about 10 minutes.

  8. Incorporate the raisins and any other dry fruit you desire.

  9. Transfer to an airtight container and enjoy!
